Earl Grey MarTEAni

A tea infused gin sour with a silky foam and a bright lemon finish.

Ingredients

• 2 oz Earl Grey infused gin (steep 1 tea bag in the gin for about 15 minutes)
• 3/4 oz lemon juice
• 3/4 oz simple syrup
• 1 egg white (optional)

Steps

1. Infuse the gin with an Earl Grey tea bag, then remove the bag.
2. Shake everything without ice first, then again with ice.
3. Strain into a chilled glass.
